Cheesecake Bars

Ingredients:
2 packets Tennis biscuits
35g softened butter
300g cream cheese
200g cream
5g lemon zest
5g gelatin
30g sugar
5g vanilla essence
100g fruit juice or curd of choice
10g gelatin
Instructions:
Prepare the Biscuit Base
Crush the Tennis biscuits until they form fine crumbs.
Mix in the softened butter until the mixture resembles wet sand.
Press the mixture firmly into the bottom of a tray lined with baking paper.
Make the Cheesecake Layer
Bloom 5g of gelatin by sprinkling it over a small amount of water and letting it sit for a few minutes.
Melt the bloomed gelatin over a double boiler or microwave in short bursts until fully dissolved.
In a bowl, whisk the cream cheese until smooth. Add sugar, lemon zest, and vanilla essence, and mix until combined.
Stir a small amount of cream into the melted gelatin, then mix it back into the remaining cream.
Gently fold the cream into the cream cheese mixture until fully incorporated.
Pour the mixture over the biscuit base and refrigerate for one hour to set.
Prepare the Fruit Topping
Bloom and melt the 10g of gelatin as before.
Mix the melted gelatin into the fruit juice or curd until fully combined.
Pour over the chilled cheesecake layer and refrigerate for 3-4 hours until fully set.
Serve
Once set, carefully remove the cheesecake from the tray.
Cut into squares or rectangles and serve cold.
