Malva Pudding

Ingredients:


50g (50ml) butter or margarine

125ml (½ cup) sugar

1 extra large egg

15ml (1 Tbsp) apricot jam

5ml (1 tsp) vinegar

250ml (1 cup) self-raising flour

2ml (½ tsp) salt

5ml (1 tsp) bicarbonate of Soda

250ml (1 cup) milk


Sauce:

170g evaporated milk

125ml (½ cup) sugar

5ml (1tsp) Vanilla essence


Directions:


  1. Pre-heat oven to 180°C. Cream butter and sugar. Add egg and beat until light and fluffy. Mix in jam and vinegar.

  2. Sift dry ingredients and add with milk to egg mixture, beating until smooth. Spoon into a greased, medium sized ovenproof dish and bake for 30-40 minutes. 

To make sauce: Heat evaporated milk and sugar until sugar dissolves. Remove from heat and add vanilla essence.

  1. Pour sauce over pudding as soon as it's removed from the oven. Serve with warm custard, ice cream or whipped cream.
