Orange Cake

Ingredients:
125g Butter
250ml White sugar
2 eggs
185ml Orange juice
240g flour
20ml baking powder
Topping:
45ml white sugar
20ml grated orange rind
Instructions:
Place butter and sugar in a medium saucepan and heat until butter melts. Beat eggs into orange juice. Add orange juice mixture and sifted flour and baking powder into the sauce pan and mix with a wooden poon until combined. Mix together sugar and orange rind.
Pour into a baking paper lined cake tin and sprinkle topping mixture on top. Bake at 180°C for 45 minutes until toothpick inserted comes out clean and cake springs back lightly when touched. Leave in tin for 10 minutes then turn onto a cooling rack and let cool.
